great fall dinner: roast pork loin on a bed of pine nut cous cous w/mashed butternut squash

roast pork loin rubbed w/new bay seasoning
near east pine nut cous cous
butternut squash microwaved w/a little butter & brown sugar

i can’t believe it is DARK at 6:30pm!!!!!!

    I just bought a butternut squash for the first time. It’s one of those things my mother would make but I never learned how to cook. Have any recommendations?

    oh, it is so versatile! the super easiest way is to cut into cubes and microwave for about 10-15 minutes. put the cubes in a microwave safe dish w/a little water…then once they are soft, you can mash them up and add butter/brown sugar/cinnamon…any spice really! you could also roast it at 375 for 30-45 minutes…then mash…or puree into a soup…very very tasty and healthy! i also made them into french fries…i cut the squash into ‘fry like’ strips and roasted them @ 400 w/olive oil, salt, pepper and cayenne…keep turning them until all sides are roasted evenly…very very good!
